SLOW COOKED APPLE BUTTER 

10-12 lg. cooking apples (14 c.), chopped
2 c. apple juice or apple cider
3 c. sugar
1 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves

Core and chop unpeeled apples. Combine with apple juice or cider in slow cooker; add sugar. (Pot may be filled to top.) Cover; cook on low setting for 10 hours or on high setting for 4 hours. Put apples into blender; blend on high speed until smooth.

Return apples to slow cooker; add spices. Cook on low setting for 1 hour or until mixture reaches desired consistency. For very thick apple butter, remove lid while cooking. Ladle into six sterilized half-pint jars, leaving 1/2-inch headspace. Adjust lids. Process in boiling water bath for 10 minutes. Apple butter will keep several weeks in refrigerator.

BLACKBERRY AND APPLE JAM 

2 lb. cooking apples
2/3 c. water
1/2 c. lemon juice
2 lb. blackberries
4 lb. sugar

Peel and core and slice the apples. Put the apples into a saucepan with the water and lemon juice and simmer for about 10 minutes or until tender. Add the blackberry and sugar and cook, stirring constantly, over a low heat until the sugar is dissolved.

Bring to a boil and boil rapidly until the setting point is reached. Pour into warm sterilized jars and seal immediately.

APPLE CINNAMON PORK CHOPS 

2-4 boneless pork chops (example: butterfly cut)
2 apples, peeled, sliced (Granny Smith are good)
1 can frozen apple juice concentrate
1 cup applesauce
cinnamon
nutmeg (optional)
salt and pepper
potatoes cut coarsely in chunks
1 heavy bottomed deep frying pan and lid

Cut the potatoes and set aside; peel and slice apples and set aside.

Heat the frying pan WITHOUT OIL (do not use oil in this recipe). Sprinkle salt, pepper, cinnamon and nutmeg on 1 side of the pork chops.

Place the seasoned side down on the hot pan and sear the meat for 1-2 minutes.

Meanwhile, season the side face up with salt, pepper, cinnamon, nutmeg. Flip the chops and sear the side you just seasoned for 1 minute.

Now add the can of apple juice and apple sauce, being sure to scrape loose the fried bits (fond) which is stuck to the pan - this adds extra flavor.

Add the apples and potatoes. Put the lid on.

Cook until apples and potatoes have become tender.

Well one thing you could make is a sort of summer cheese cake type thing but without the cheese :-)  My family make this dessert in summertime with apples or gooseberries.  Maked stewed apple - peel the apples and slice them up into small pieces (throw away the core obviously) and put them in a saucepan with a little water (about 1/2 a cup) and sugar on a medium - low heat (I normally put about 2 tablespoons of sugar in but it depends on your personal taste and how tart the apples are.)  Put the sugar in gradually and keep tasting it, add more as required.  The apples should melt down and make a kind of sweet apple sauce.  I like to leave it a little lumpy myself just for a bit of texture, but that's up to you.
Make a biscuit (cookie if you prefer that word) base using digestive biscuits if you're from my neck of the woods or I believe they're called Graham Crackers in the states.  Spread the stewed apple over the biscuit base and top it with some whipped cream.  Alternatively mix the stewed apple through some mascarpone cheese and spread that over the biscuit base instead.   Chill it for a little while before serving.  Might not the healthiest recipe in the world but it's not the worst either! ;-)</description>
